Celery is a crunchy, fibrous vegetable with a refreshing, slightly peppery flavor. Often enjoyed raw for its crisp texture, celery is also great in soups, stir-fries, or roasted for a deeper flavor. Its stalks, leaves, and even seeds are edible and versatile in both fresh and cooked dishes. 

Season: June - November

Storage and Preparation

Store celery in the refrigerator wrapped in aluminum foil or in a sealed container to maintain crispness for up to two weeks. Wash thoroughly before use. Slice the stalks for snacks or cooking, and don’t discard the leafy tops; they’re great for garnishes, broths, or adding flavor to salads. 

Nutrition

Celery is low in calories and a good source of vitamin K, potassium, and antioxidants. Its high water content also provides fiber and supports hydration.

 

Celery Herb Soup

Ingredients:

  • 2 tbsp olive oil or butter 

  • 1 onion, diced 

  • 4 garlic cloves, chopped 

  • 6 cups celery, thinly sliced (1 large head) 

  • 2 cups potatoes, sliced ½ inch thick (1 

  •  large russet or a few Yukons) 

  • 4 cups veggie or chicken broth 

  • 1 cup water 

  • 1 bay leaf (optional) 

  • 1 tsp salt 

  • ½ tsp pepper 

  • ⅛ tsp cayenne (optional, adjust to taste) 

Instructions:

  1. In a large pot, heat oil over medium-high heat. Sauté onion until golden (about 5 mins).
  2. Add garlic, stir for 1-2 minutes until fragrant. 
  3. Add celery, potatoes, broth, water, bay leaf, salt, pepper, and cayenne. Bring it to a boil.
  4. Cover and simmer on low until potatoes are soft (about 10 mins).
  5. Remove bay leaf. Add dill and parsley and wilt briefly.
  6. Blend until smooth using an immersion blender or cool and blend in batches.
  7. Return soup to the pot. Stir in cream of choice. Warm gently without boiling. 

Asian Inspired Celery Side

Ingredients:

  • 1 tbsp olive oil 
  • 1 small onion, chopped 
  • 3–4 celery stalks, sliced  
  • 2 garlic cloves, minced 
  • 1 tbsp tamari (or soy sauce) 
  • Salt + pepper to taste 
  • Optional: fresh herbs (parsley, dill, or thyme) 

Instructions:

  1. Heat oil in a pan over medium heat.
  2. Add onion and cook 5 minutes, until soft.
  3. Stir in celery and cook 5–7 minutes, until tender.
