Storage and Preparation

Carrots can be eaten in a variety of ways. They can be baked into desserts or served in savory dishes. Prepare carrots by rinsing them under cool running water and peeling with a vegetable peeler. Store carrots in a sealed plastic bag or container in the vegetable drawer or the refrigerator with a paper towel for moisture absorption. Keep ready-to-eat carrots away from raw meat products to avoid the risk of cross-contamination. 

Nutrition

Carrots are known for their high content of beta-carotene and antioxidants that can support eye health and lower cholesterol levels. Carrots are low in fat and high in fiber which improves digestion and balances blood sugar levels. This delicious root vegetable can be found in a variety of colors, which can add beauty to any meal or dessert! 

Carrot Recipes

Smoky Carrot and Chickpea Traybake

Ingredients:

  • 4 Tbsp olive oil
  • 1 red onion, thick slices
  • 4 garlic cloves, finely chopped
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp ground cinnamon
  • ½ tsp chili flakes
  • 3 cups carrots, cut into 2cm cubes
  • 2 cups cherry tomatoes
  • 2 cans chickpeas
  • 1 lemon, zested and juiced 

Instructions:

  1. Preheat oven to 400°F.  
  2. Toss 1 Tbsp olive oil, onion, garlic, spices, carrots, cherry tomatoes, and chickpeas together in a large roasting tin. Add a cup of water to the tin. Season well and stir in a splash of lemon juice. Roast for 35-40 minutes until the carrots are tender and the sauce has reduced.
  3. Meanwhile, combine the lemon zest, feta, and herbs with the remaining 3 Tbsp olive oil and set aside.
  4. Season the traybake to taste with salt, pepper, and lemon juice. Scatter feta mixture over the top. Serve with flatbreads for scooping up the carrots and chickpeas. 

Carrot Cake Bliss Balls

Ingredients: 

  • 2/3 cup carrots, finely chopped
  • 12 soft Medjool dates, pitted, and soaked if dry
  • 2 tsp maple syrup
  • ½ cup ground flax seed
  • ½ cup chia seeds
  • 1 cup unsweetened shredded coconut
  • ½ tsp cinnamon 

Instructions: 

  1. In a food processor, combine flaxseed, chia seed, shredded coconut, cinnamon, and salt. Pulse until it becomes a fine meal.
  2. Add the dates and carrots. Pulse until the mixture combines and sticks together. Taste and add more maple syrup if you would like your bites sweeter. If the mixture is too dry, add more maple syrup; if it’s too moist, add more coconut and /or let the mix chill in the fridge for 20 minutes to firm up.
  3. Use a tablespoon to scoop the mixture, then use your hands to roll into approximately 1-inch balls. 
  4. Roll in the remaining coconut to coat the outside, if desired. Store in the fridge in an air-tight container for up to 5 days.
