This fiber-rich chia seed pudding with berries is an easy make-ahead breakfast or snack made with chia seeds, non-dairy milk and berries. Packed with fiber and plant-based nutrition, it's a creamy, satisfying option that can be customized with your favorite toppings.

Serves 6-8

Ingredients:

  • ½ cup chia seeds
  • 1 ½ cups non-dairy milk of choice (unsweetened)
  • 2 – 2.5 cups fresh or frozen berries 
  • 1-2 Tb maple syrup or honey
  • 1 tsp vanilla extract

Directions:

  1. Combine all ingredients in medium bowl and mix well. 
  2. Place in the refrigerator for 20-30 minutes, or overnight. 
  3. The mixture should have a thick, pudding-like consistency. If it is too thick, add more milk. If it is too thin, add more chia seeds 1 Tb at a time.

Culinary Tips: 

If using frozen fruit, let it defrost for 10-15 minutes before combining with the other ingredients.

Top with nuts (cashew, pistachio, almond), seeds (pumpkin, sunflower), or cocoa nibs for added texture and crunch.
