This refreshing watermelon, cucumber and feta salad is the perfect summer side dish—cool, crisp and lightly dressed with a zesty honey-lime vinaigrette. Topped with fresh herbs and optional avocado, it’s a vibrant blend of sweet, savory and creamy textures.

Ingredients

  • 4 cups seedless watermelon (or remove seeds)
  • 1 English cucumber, chopped (approx.. 1.5 cups)
  • 4 oz feta cheese, cubed or crumbled
  • 1/2 small red onion, thinly sliced
  • 1/2 ripe avocado, diced (optional)
  • 2 tbsp chopped fresh mint (or basil)
  • 1 small jalapeño, seeded & chopped (optional) 
Vinaigrette
  • 3 tbsp red wine vinegar
  • 1 tbsp honey
  • 2 tsp lemon zest + 1 tbsp lemon juice
  • 1/4 tsp each salt & black pepper
  • 3 tbsp extra-virgin olive oil

 

Instructions

  1. Make the dressing: Whisk vinegar, honey, lemon zest and juice, salt and pepper. Whisk in olive oil until well blended.
  2. Toss the salad: In a large bowl, combine watermelon, cucumber, feta, onion, avocado (if using), mint, and jalapeño.
  3. Dress: Pour on about 3/4 of the vinaigrette and gently toss. Chill 20-120 minutes.
  4. Serve: Drizzle remaining dressing before serving. Garnish with extra herbs if desired.
