Storage and Preparation

Store sweet potatoes in a cool, dry place (not the fridge!) for weeks. Wash them well and peel (or not) before cooking, then bake, mash, roast, or even blend them into soups and smoothies for a creamy, nutritious boost.

Sweet Potato Recipes

Baked Sweet Potatoes

Cooking Time: 45 min

Yield: 2 servings

Ingredients:

  • 2 medium sweet potato
  • Topping ideas: butter or vegan butter, chives, Greek yogurt or tzatziki, guacamole, etc.

 

Instructions:

  1. Preheat the oven to 425°F and line a baking sheet with foil.
  2. Rinse the sweet potatoes, and then use a fork to poke holes all over them.
  3. Place the sweet potatoes on the prepared baking sheet and roast for 40 to 50 minutes, or until they puff up and feel soft when pierced with a fork.
  4. Add your favorite toppings and enjoy!

Mashed Sweet Potatoes

Cooking Time: 40 min

Yield: 6 servings

Ingredients:

  • 6 medium sweet potatoes, peeled and cubed
  • 3/4 cup warm 2% milk, or as needed
  • 1/2 cup unsalted butter, softened and cut into chunks
  • 3/4 cup maple syrup, or to taste
  • Salt

 

Instructions: 

  1. Bring a large pot of salted water to a boil. Add the cubed sweet potatoes, reduce the heat to medium-low, and simmer until tender, approximately 20 to 30 minutes.
  2. Drain the sweet potatoes and transfer them to a large mixing bowl.
  3. Using a potato masher, mash the sweet potatoes until smooth. Gradually add the warm milk, 1/2 cup at a time, mixing until the desired consistency is achieved.
  4. Stir in the softened butter and maple syrup until fully incorporated and the butter is melted. Adjust the seasoning with salt as needed.
  5. Serve warm and enjoy.
